After passing on his restaurant, L’Artichaut in Carouge, Jan Bertiaux took time to deepen his roots and strengthen his connections to the world of wine. This journey reignited the passion for creating a space where handcrafted wines could be shared in casual company. Alongside Anatole, he opened L’Épinard—a wine bar dedicated to responsible winemaking, featuring a small, rustic menu displayed on a chalkboard. It’s sophisticated yet at ease, mirroring the attentive yet effortless service.
